Our roasters provide a “birthday” date on every bag of our custom-roasted coffees. Yes, every single bag of our premium coffee beans includes a Roasting Date, the date when the master roaster actually roasted and bagged your coffee beans. In fact, this date will be hand-written and initialed by our roast master each and every time. This is possible only because our roaster roasts our coffee beans one order at a time. So, every coffee bag is roasted just for you!  You cannot beat this for freshness! 

Many of our clients ask us if they should refrigerate the coffee beans or ground coffee after opening the bag. You don’t need to refrigerate the coffee beans or ground coffee at all. Just keep the coffee beans or ground coffee in a dark dry place (like the cabinet), and this should work just fine for your coffee beans. For best results, we recommend that you use the coffee beans or ground coffee within 6 months of the roasting date and within 30 days after opening the coffee bag.

                

Puerto Rican Coffee

Puerto Rican coffee, either whole coffee beans or ground coffee,  is often described as a  low acidity, mellow coffee - perfect for sipping. and flavor. Our roaster uses premium shade coffee beans from Hacienda Ana Luisa in the mountains of West-central Puerto Rico in the town of Las Marias. These coffee beans are grown under the shade canopy of native tropical trees. Delicate custom-roasting maximizes flavor and aroma. These 100% arabica  shade grown Puerto Rican coffee beans have a hint of chocolate flavor combined with a smooth aftertaste. Try our Puerto Rican Coffee.

Our Bolivian high-altitude, shade-grown coffee beans come from Caranavi, Apolo and Alto Beni - they Yungas region - under the shading canopy of native trees.  All beans were depulped and washed using pure Andes glacier-melt water, then sun-dried on wooden table tops and hand selected by "Palliris" (Aymara Indian women food graders).


Our decaf beans are decaffeinated by the chemical-free water process, the preferred decaffeinating method. The water process (often referred to as the Swiss-Water® process) removes caffeine from the coffee beans without using solvents or chemicals. The more traditional method of removing the caffeine uses Meythylene Chloride (MC) to remove the caffeine. If you are interested in naturally decaffeinated coffee and want the most chemical-free coffee possible,  you want to choose the naturally water decaffeinated coffee, even if you have to pay a little more. Try our Bolivian coffee.

Nicaraguan organic bird-friendly shade grown fair coffeeNicaraguan Coffee

These Rainforest Alliance certified, organically grown, bird friendly and shade grown coffee beans come directly from the Selva Negra Coffee Estate in Nicaragua.  The Nicaraguan Estate coffee has a perfect triangular balance of body, flavor, and acidity and comes from the Maltagalpa area which has a unique soil and climate. Each bean is hand-picked .Only red cherries can be used  to produce this high quality coffee. The green beans must wait for the next round of picking. Usually the second round of picking produces the largest harvest of the season.This coffee is highly dependent on the roast. The depth of this cup tends to increase as the coffee cools. Organic Colombian shade grown fair trade coffeeColombian Coffee

Our 100% Colombian, 100% Bird-Friendly®, certified USDA Organic, and Rainforest Alliance Fair TradeCoffee is grown on the Mesa de Los Santos Estate farm in Santander, Colombia, founded by Telmo J. Diaz over 100 years ago. Mesa de Los Santos, a private estate, pays wages 65% above the Colombian minimum salary to the 310 workers producing this coffee. This estate uses sustainable farming practices and has received national recognition for its environmentally-friendly practices.  The multi-layered shade of the farm is an absolute haven for resident and migratory birds. The resulting coffee is rich in flavor, heavy bodied, has a bright acidity, and is intensely aromatic.  Try our Columbian coffee.
