These Rainforest Alliance certified, organically grown, bird friendly and shade grown coffee beans come directly from the Selva Negra Coffee Estate in Nicaragua. This Nicaraguan Estate coffee has a perfect triangular balance of body, flavor, and acidity and comes from the Maltagalpa area which has a unique soil and climate. Each bean is hand-picked, and only red cherries can be used to produce this high quality coffee. The green beans must wait for the next round of picking. Usually the second round of picking produces the largest harvest of the season.This coffee is highly dependent on the roast. The depth of this cup tends to increase as the coffee cools.
