What is organic coffee?
Organic coffee growers avoid using chemical pesticides, herbicides, and fertilizers, opting instead for more natural methods with a low impact on the environment. Organic coffee is often shade grown on plantations retaining the original forest canopy. Organic coffee production replenishes and maintains soil fertility, building a more biological diverse agriculture. Most non-organic coffees are mass-produced on plantations where the original forest has been removed. Without that shading canopy, farmers need to use herbicides, fertilizers, and pesticides on their coffee plants. Organic coffee also stimulates a bird friendly environment. According to the Organic Trade Association, organic farms have 25% more birds at the field edge, with 44% more in-field birds in the fall and winter. Our blog fuurther explains the organic process.

What do you mean by "shade grown coffee"?
Coffee originally was grown in the shade of trees, to protect the leaves from burning, but over the past 30 years, new sun-tolerant coffee varieties have been developed. USAID and other international developmental agencies have encouraged coffee farmers to convert their shade grown coffee practices to sun-grown systems. While sun-grown coffee produces substantially increased yields, this method of coffee farming requires the use of chemical fertilizers in addition to insecticides, herbicides, and fungicides. Coffee trees grown on sun plantations tend to lack tree root structures, often resulting in increased erosion and toxic run-off.
Because more sun coffee trees can be cultivated per acre as opposed to shade varieties, and each sun-grown coffee tree produces as much as three times the amount of coffee as that of shade-grown coffee trees, coffee farms have started to shift away from shade-grown coffee to sun-grown coffee. Sun-grown farms, however, have been linked to serious environmental side effects. Coffee cherries from sun-grown coffee trees are also smaller than those from shade-grown coffee trees.
The traditional shade-grown coffee farm resembles a forest. This forest has several layers of trees (including fruit trees and hardwoods), plants that grow in the tops of trees (such as orchids), and other bushes and plants. Often as many as 40 different species of trees are found in the traditional shade coffee plantation, protecting the coffee plants from the scorching sun, rain, and wind, and reducing the need for weeding and pest control. As in any forest, organic matter builds up, creating a natural mulch layer. This forest also supports a variety of wildlife. This environment differs greatly from the sun-grown field that resembles a corn field with only one species of plant.

What do you mean by "roasting level," and how do I choose which one is best for me?
Your coffee is roasted when you order it, so My Perfect Coffee offers you the freshest coffee roasted to your specifications. We provide three levels of roasting: Light, Medium, and Dark.
Light roasting, also, referred to on our site as City roasting, produces a light colored bean which where the coffee flavor and aroma are balanced and very complex. Not too strong, not too light, just right. We recommend this level of roasting if you prefer to drink your coffee with no cream, sugar, or anything else. Just plain coffee.
Medium roasting, also referred to as Vienna roast, is good if you prefer your coffee with milk, cream or any other flavoring. This a great grind if you like strong plain coffee.
Our Dark roast, or French Roast, is the most common espresso roast level. This roasting level is great for brewing flavored and/or iced coffee. It has a very strong but simple flavor.

Type of grind? What is that exactly? How do I choose?
The type of grind you choose depends on how you plan to use the beans. If you plan to grind the beans yourself, select whole beans. Do you use a French Press to make your coffee? If so, you want to select a Coarse grind. Do you use a regular drip brewer? Then select a Medium grind. If you plan to make espresso, then select the Fine grind.
